Among the vineyard-covered hills of Piedmont, a centuries-old monastery has entered a new chapter. Borgo Monchiero Heritage by Atmosphere, in the heart of the Langhe, has opened following an extensive restoration, becoming Atmosphere Core’s first property in Europe and an important step in the international hotel group’s expansion beyond the Maldives.
The project has been considerable. Restoration began in 2024 under architect Stefano Tardito, with the challenge of transforming an 18th-century monastic complex into a contemporary luxury hotel without losing the identity that made it worth preserving in the first place.

Today, historic stone, vaulted ceilings and former monastic spaces remain very much part of the experience, but they are joined by contemporary interiors, fine dining, wellness and highly personalised hospitality.
A Piece of the Langhe’s History
Borgo Monchiero developed around the Santuario della Madonna del Rosario, founded in 1752. Over the years, the village also became connected to a circle of artists inspired by the particular light and landscape of the Langhe, including Eso Peluzzi and Claudio Bonichi.
That artistic heritage remains visible today through works displayed around the property and dedicated museum spaces. The historic sanctuary and beautifully restored chapel add another dimension and can also provide remarkable settings for weddings and private celebrations.

Rather than recreating the past, the restoration allows these different layers of the borgo to remain visible while giving the buildings a new purpose.
Sleeping in the Monastery
Borgo Monchiero has just 25 rooms and suites, divided between the Monastery and Villa, giving the property an intimate character.
Within the monastery, former monks’ cells have been transformed into elegant rooms that retain their original proportions and architectural details while introducing contemporary comforts and bespoke furnishings. Larger Heritage Grand Suites offer more space, while the Prior’s Room creates a private two-bedroom residence with two bathrooms for families or small groups.

Some of the rooms offer more than privacy and comfort; they provide an unexpected connection to the monastery’s spiritual past. In the Heritage Grand Suite and the Prior’s Room, small original windows open directly towards the church. Once connecting the monastic cells with the sacred space, they allowed those inside to remain linked to the life of the church. It is an intimate architectural detail that makes staying here feel like touching a piece of its centuries-old mystery.
The Villa has a different character, closer to a historic Piedmontese residence, with brighter interiors and a more residential sense of privacy.
Outside the rooms, much of the pleasure comes from simply exploring: stone corridors lead towards gardens, quiet corners open unexpectedly onto the surrounding landscape and terraces frame long views across the vineyards.

From Piedmont to the Mediterranean
Gastronomy is naturally an important part of the experience. At Eira, the signature fine-dining restaurant, Executive Chef Giorgio Servetto works alongside Resident Chef Alessandro Di Giacomo. Chef Servetto brings significant Michelin experience from his previous work at Ristorante Nove and Vignamare.

His cuisine begins with Piedmont but is not confined by it. Liguria and France enter the conversation, alongside Mediterranean influences and references to Campania. Small sharing plates and more substantial signature dishes allow the menu to move between regions while remaining closely connected to Italian produce and seasonality.

For a more informal moment, Olo Bar serves canapés, artisanal cured meats, regional cheeses and cocktails incorporating local ingredients. The Willow panoramic terrace provides another setting altogether, overlooking the Langhe for leisurely lunches, sunset aperitifs and dinners outdoors.

Private dining is also part of the experience, with secluded areas around the estate offering atmospheric settings for dinners built around local flavours and wines.
Wellness Within Historic Walls
At Borgo Monchiero, the wellness experience unfolds within the historic architecture of the monastery, where centuries-old stone and water create a naturally intimate atmosphere. The panoramic outdoor pool looks across the hills, with the historic monastic architecture forming its backdrop. Beside it, EVA pool bar offers a relaxed setting for drinks while taking in the surrounding landscape.

Inside, an original vaulted stone cistern has been transformed into a heated pool, with water maintained at approximately 38°C. Surrounded by old masonry, it is an unusual and deeply atmospheric setting — intimate, quiet and very different from the predictable aesthetic of a conventional hotel spa.

The wellness area also includes a sauna, relaxation room, emotional shower and Scottish shower, creating a compact but complete thermal experience. The simplicity works well here: the architecture provides much of the atmosphere.
Art, Wine and History
The property is surrounded by vineyards and has its own certified truffle woods, where guests can discover the Piedmontese tradition of truffle hunting. Gardens and terraces provide quieter spaces for doing very little at all — arguably one of the great luxuries of a stay in the Langhe.
Borgo Monchiero is also well positioned for exploring one of Italy’s great gastronomic regions. Barolo, La Morra, Monforte d’Alba and Alba are all within easy reach, opening up days of winery visits, long lunches, medieval villages and drives through the UNESCO-listed vineyard landscape.

The property can arrange experiences around the region, including wine tastings and visits to historic cellars. Its location also places guests between very different parts of northern Italy: the Alps in one direction and the Ligurian Riviera in another.

Borgo Monchiero marks Atmosphere Core’s first chapter in Europe, while remaining unmistakably Piedmontese. Thoughtful contemporary design sits naturally within centuries-old architecture, while attentive, highly personalised service gives the intimate property a distinctly modern sense of luxury. Here, history is not simply preserved, it becomes part of the stay, with the vineyards and quiet beauty of the Langhe always just beyond the window.
