Monte-Carlo Société des Bains de Mer (SBM), a leading name in Monaco's hospitality and leisure industry, has unveiled an ambitious slate of projects for 2024. Stéphane Valeri, the Chairman and CEO of SBM, highlighted these upcoming ventures in his New Year address to the press at the Crystal Bar, Hôtel Hermitage.
Among the key announcements, the Blue Bay restaurant is set for a relaunch next month under the guidance of two-starred Michelin chef Marcel Ravin. This renovation is poised to redefine the culinary experience, showcasing Chef Ravin's exceptional talent.
Another major development is the eagerly anticipated opening of the Amazónico restaurant on April 4, 2024. Located on the rooftop of the new Café de Paris, Amazónico will offer a blend of Peruvian and Brazilian cuisine, enhancing SBM's diverse culinary offerings. Additionally, seven new boutiques will be introduced at the Café de Paris, opening in phases from April through autumn.
In July 2024, SBM will expand its gastronomic landscape with a new Japanese cuisine concept in collaboration with three-star Michelin chef Yannick Alleno at the Crystal Bar. Furthermore, the much-awaited reopening of Moods is scheduled for October 17, promising a unique blend of live music and comedy.
A significant highlight is the transformation of the vast wine cellars at the Hôtel de Paris. These cellars, housing a vast collection of the world's finest wines, will undergo renovations to include an expanded museum, a revived subterranean restaurant, and organized tours, thus commercializing this hidden gem.
