Operating as a foundational institution in the Principality since its founding in 1868 under François Blanc and Prince Charles III, the Café de Paris Monte-Carlo serves as both an urban anchor and a primary dining venue on the Place du Casino. Managed by Monte-Carlo Société des Bains de Mer (SBM), the restaurant balances classical Parisian brasserie traditions with regional Mediterranean culinary influences.

Led by Executive Chef Victor Marion, the kitchen program focuses on precision, generosity, and seasonal produce.
